Join our culinary team as a Fine Dining Sous Chef, where you will have the opportunity to showcase your cooking skills and lead a motivated kitchen staff at our Signature Restaurants. In this role, you will embody leadership qualities, fostering a vibrant and positive atmosphere that emphasizes excellence and teamwork. Collaborate closely with our front-of-the-house staff to create an engaging environment that inspires creativity and exceptional dining experiences.

The Signature Restaurants include Napa Rose, Carthay Circle, Club 33, and 21 Royal.

Your Responsibilities Include...

• Demonstrating expertise in culinary techniques, including butchery, saucier, pastry, and modern cooking methods.

• Possessing in-depth knowledge of various cuisine styles, including French, Spanish, Italian, Mediterranean, American regional, and Asian.

• Strategically writing and implementing seasonal menus inspired by fresh ingredients.

• Building a strong team through trust, collaboration, and continuous education.

• Effectively communicating the vision and goals of our Signature Restaurants.

• Managing food costs, kitchen labor, and overall operational expenses.

• Fostering relationships with artisians, farmers, fishmongers, ranchers, and foragers.

Basic Qualifications...

• Minimum of 5 years of Culinary Management experience in a fine dining setting.

• Strong written and communication skills.

• Proficiency in computer skills, particularly Excel.

• Understanding of cost management and restaurant operations.

• Excellent organizational and time management abilities.

• Flexibility to work various shifts and adjust to a dynamic environment.

Preferred Qualifications...

• Advanced knowledge of fine dining ingredients and preparation techniques.

• Understanding of wine pairing and current service trends.

• Knowledge of nutrition and dietary preferences.

• Experience in guest service, including knowledge of bartending and serving.

• Higher level education in Culinary Arts.

Required Education:

• Associate's Degree in Culinary Arts or equivalent experience.
